Mother’s Day is right around the corner, and nothing shows Mom how much you love her quite like a delicious cake. Baking a cake from scratch can be a big undertaking for kids, but did you know that a few simple variations on traditional box cakes can create a delightful and decadent treat that will make Mom super-proud? The Pie Filling Cake
When we first heard about this re
cipe, we were a little bit surprised. It seems deceptively simple, and it certainly isn’t something most of us would think of. Believe it or not, you can take any flavor of dry cake mix, combine it with three large eggs and a can of Mom’s favorite flavor of pie filling, stir it together and bake at 350 for around 35 minutes or until the toothpick test comes out clean for an out of this world delight. Strawberry cake and filling or a vanilla cake with apple pie filling are some of our favorites!
The Dry Cake Cobbler
This is another of our favorite Mother’s Day cake recipes and one that the family is sure to love. Start out with two bags (12 ounces each) of frozen berries. Any flavor will do, though keeping Mom’s favorite in mind is always good. Pour a single box of dry white cake mix over the top and slowly pour a can of clear lemon-lime soda over the top. Don’t stir. Bake the mixture for about 45 minutes at 350 degrees or until the berries are done and your crust is brown and you’ll have a treat Mom will love!
While smaller kids might not be able to bake from scratch or use the oven alone, there are lots of recipe variations out there that enable them to be incredibly creative without risking injury (or destroying the kitchen). Here, we will take a look at a couple of recipes with spring vegetables that your kids are bound to enjoy. Guacamole
One of our favorite recipes with spring vegetables is also the easiest to make. Guacamole is always a fun dish to eat, and pairs great with pita bread or corn chips. To make an easy and kid friendly version, simply peel and then mash a couple of avocados, add in a single finely chopped onion, some minced garlic and chopped tomato and then season it how you like using lime juice, salt, and pepper. Add in about half an hour to chill it all when you are done and you have the perfect snack for an afternoon of springtime outdoor activities.
Caramelized Vidalia Onions
Vidalia onions are one of the best spring vegetables. They are sweet and flavorful and can be added to anything from salads to steaks. One of the best ways to prepare Vidalia’s for serving with meat or pasta dishes is to caramelize them, and it couldn’t be simpler. Simply peel and then quarter the onions, then slice them until they are about a quarter inch in size. Melt a bit of butter on medium heat using a sauté pan and toss in the onions, making sure to stir them until they start turning brown. Once this happens, reduce the heat a bit and keep stirring until they are caramel in color. Once you are done, you are ready to add them to just about anything.

Spring is all about fresh and new; a great time to come up with some new dinner ideas the kids will love and can even help a little along the way too. If you’re tired of the same old thing but have a difficult time coming up with new creations that your kids will be willing to eat, consider these spring dinner ideas.
Spring Pizza
Homemade pizza is easier than you think, and by using fresh vegetables that the kids like, it’s the perfect way to incorporate spring and healthy eating. If they’re old enough let them prepare and chop the veggie toppings.
Ingredients:
- Ready-made pizza dough or crust
- Jar of pizza sauce
- 2 cups mozzarella cheese
- Kids choice of veggie toppings (and other toppings as desired)
If you’re using dough, let the kids shape it onto the pizza pan and spread the sauce across the dough. Sprinkle with cheese and toppings. Place into the oven as directed on dough or crust package.
Chicken Fingers on a Stick
With spring comes the opportunity to grill as the weather warms, and serving chicken on a skewer using the kids’ favorite sauces makes it even more appealing to the little ones.
Ingredients:
- 4 Boneless, skinless chicken breasts thinly sliced into strips
- Salt and pepper to taste
- 24 10” bamboo skewers (soak in water for about a half hour first)
- 3 T. vegetable oil
- 2 T. barbecue sauce
- 1 ½ cups dried bread crumbs
- Kids’ choice of thinly sliced vegetables, optional
Directions:
Sprinkle chicken strips with salt and pepper and place them onto the skewers. Stir the oil and barbecue sauce together in a small bowl. Brush the mixture lightly over the chicken strips and then roll into the bread crumbs. Add sliced vegetables as desired. Grill using a charcoal fire or gas grill uncovered until they are no longer pink inside, typically 2-4 minutes per side. Serve with the kids’ favorite dipping sauce.

Part of the fun in making any holiday cookies is getting the kids involved. Consider these two fantastic Easter cookie recipes this year to instill an enjoyment of baking and to create some tasty treats.
Easter Sugar Cookies
One of the best Easter Cookie Recipes that kids can help with is the basic sugar cookie recipe that allows for lots of creativity by using cookie cutters in holiday shapes like bunnies, eggs and chicks and tasty toppings.
Ingredients:
- 1 cup butter, softened at room temperature
- 1 cup powdered sugar
- 2 eggs
- 4 tsp. orange zest
- 3 ½ cups flour
- ½ tsp. salt
- Butter Cream frosting
- Colored sprinkles and other toppings as desired
Instructions:
Place wax paper onto cookie sheets and preheat oven to 350 degrees Fahrenheit. Beat butter in a large bowl until smooth. Add powdered sugar, beating until well-mixed. Add eggs, orange zest, salt and flour and mix until it has the consistency of dough. Let the kids help by allowing them to mix the dough for a few more minutes; wrap with plastic wrap and place into the refrigerator for an hour.
Unwrap the dough and roll out onto a floured surface with a rolling pin until ¼” to ½” thick. Cut out shapes using Easter-shaped cookie cutters and place onto cookie sheets. Bake for 8-10 minutes; until golden brown. Remove from the oven but leave the cookies on the cookie sheet for several minutes before placing onto a wire rack to cool.
When the cookies have cooled completely (30-45 minutes) let the kids spread on the frosting and add the sprinkles or other toppings.
Simple yet Spectacular Easter Cookie Creation
Just a few ingredients are all it takes to make this fabulous Easter creation.
- 1 package rolled sugar cookie dough
- 20 miniature chocolate bunnies
- 1 bag of Easter jelly bellies, optional
- Colorful sugar sprinkles
- 1 container vanilla or green mint ice cream
Instructions:
Bake cookies according to package directions. Allow to cool completely before decorating. Place a scoop of ice cream onto each cookie and top each with a chocolate bunny. Dust with sugar sprinkles and add Easter jelly bellies if desired.

Ingredients:
- 12 button mushrooms (cremini)
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 (8 ounce) package cream cheese, softened
- ¼ cup grated parmesan cheese
- ¼ teaspoon ground black pepper
- ¼ teaspoon onion powder
Instructions:
1. Preheat oven to 350F degrees. Spray a baking sheet with cooking spray.
2. Wash mushrooms gently and carefully pull and remove the stems.
3. Remove the tough parts of the stem and chop the remaining stem very fine.
4. Heat the oil in a skillet over medium heat and add garlic and chopped mushroom stems. Fry until
there is no more moisture. Be careful not to burn the garlic. Set aside to cool.
5. When the garlic and mushroom mixture is cool, stir in cream cheese, parmesan cheese, black pepper, and onion powder. (The mixture should be thick). Using a dessert spoon, carefully fill each mushroom with a generous amount of stuffing.
6. Arrange the mushrooms on a baking sheet and bake for 20 minutes or until liquid starts to form under the mushrooms.

3 medium parsnips (about1 pound), cut into 1 1/2-inch thick slices

1 teaspoon dried thyme
1 teaspoon dried basil
1/4 teaspoon sea salt
2 tablespoons freshly ground black pepper

- Preheat oven to 400 degrees F.
- Grease an 11 by 17-inch baking sheet pan with extra-virgin olive oil. Pour and align vegetables in a large bowl and add the dried herbs, salt and pepper. Toss well, evenly coating all the vegetables with the seasonings and oil. Add more oil if the vegetables seem dry

Easy and Quick Vegetable Recipes for Kids

Baked Broccoli with Cheddar Cheese
1 head fresh broccoli (or 1 lb precut florets)
2 oz water
3 Tbs butter
1⁄4 tsp salt, or to taste
1 cup grated cheddar (or more if you like it cheesy)
1. Preheat oven to 350°F. Wash broccoli and cut into bite-size florets. Place into a steaming basket. Add water, and steam until broccoli is tender but still slightly firm. Drain well. Rinse and dry the baking dish, then lightly butter it with 1 tablespoon of the butter. Arrange broccoli in a single layer in the baking dish.
2. Sprinkle the broccoli with salt, and top with the cheese and remaining butter.
4. Bake about 20 minutes, or until cheese is melted.

Zucchini Oven Chips
1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese

2 tablespoons fat-free milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)

Place coated slices on an ovenproof wire rack coated with cooking spray Place the rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately with your favorite dressing or store bought marinara sauce.

Raspberry and White Chocolate

Get a medium bowl and sift your flour and baking powder, baking soda, and salt together. Get another bowl and add butter and sugar together with eggs and a touch of vanilla. Gradually add flour into the mix and beat the contents until it’s completely smooth.
